Hi Eva, Macaron’s used to intimidate me, but once you got this rhythm going, and do the recipe a few times, it becomes second nature. Pate Choux can be used for savory dishes, we used to use them in dumpling stew “gah” but it’s really tasty.

Even though I just had breakfast, seeing your gorgeous photos of the eclairs is making me hungry! I’m intimidated by pate choux but hope to try it someday!

Once you get the pate choux down a whole big door opens up! If you can handle eclairs try to crank out some cream puffs next. They are well worth it! The movie by Cameron stunk (the movie “A Night to Remember” made in the 50′s is much better) but your eclairs look perfect.

Your photos are absolutely beautiful (not just the eclair photo, but all of the ones on your website). The eclairs in particular look amazing! And I confess, at first I was going to skip over reading that bit of Titanic history, but I got to wondering how the eclairs were related, and I’m glad I read it. What an interesting story – the fact that Molly Brown made the choice to board the Titanic and ended up surviving! Thanks for the story and the recipe :)

They are one of those desserts that go well with breakfast, over coffee, and I guess the protein can come from the custard, right? “wink”!
