recipes: japanese potato salad with crab

I have often loved side dishes more than the meal itself, this Japanese inspired potato salad is no exception. Potato salad is one of those sides which are so versatile, every family has their own version. What's not to love more than a cool, refreshing, and filling side dish during the summer months. What I love the most is that Japanese potato salad doesn't have any acidic overtones. Potato salad for me is synonymous with cookouts, picnics, and lounging around on the beach with your coleman cooler snuggled between the sandwiches and beer. While living abroad, I had the opportunity to try Japanese potato salad, and while each family's version differs, this is the one I love the best.

Thanks for stopping by – this looks like a great variation on potato salad I love the Asian influence…

I take it you can use any potato you desire – perhaps some yukon golds? :)

Hello Claudine, absolutely, you can use any potato you’d like, the more varieties, all the better = )

This sounds delicious! I love the addition of crab. Does Japanese mayo taste really different? I’ve seen it in a couple recipes lately and was thinking I might need to pick some up soon. Thanks!

Hi Barefeet in the Kitchen, it is really such a nice addition, it does taste substantially different, it’s quite good too, one has a more vinegar taste (Japanese), both have great tastes, sometimes you can find it at your local grocery, other times you may have to go to a Japanese market. Thank you so much for commenting.
