I hosted a gathering and a friend brought these delectable little appetizers that flew off platter. I had to know what they were and how to make them. She told me what they were called and gave me the recipe, which she knew off the top of her head. With only 6 ingredients it is easy to remember and once you’ve made them you will see that they are equally as easy to make. For years we massacred the name of this tasty, savory treat. We came as close to a phonetic spelling as possible. We called them “suh-garrah bo-reh-gah”. I did a little research and discovered that this is a widely enjoyed meal in countries such as Turkey, Greece, Armenia, Bosnia, Serbia, and Albania just to name a few. She helped me to adjust and grow in a culture that was very foreign to me. Because of my husband’s career in the USMC I’ve spent many years on and off south of the Mason Dixon Line. Twenty years ago, when I first moved to North Carolina as a newlywed I was reluctant to embrace anything southern. With a heavy New Jersey accent I stood out like a sore thumb. I went through many adjustments that first year of marriage. Military life, carrying our first child, and living within a culture foreign to me all caused me to cling to my roots, particularly the food. I have vivid memories of running down a street in New York City’s Chinatown. I had just finished eating a wonderful meal and a sweet treat. I was taking in all the sounds (firecrackers mostly) and sights of Chinese New Year’s celebration when suddenly, I wandered into a procession of dragons and drums. I didn’t wander into the main parade, which had already taken place. I had found myself in the middle of a large celebratory crowd. Perhaps it was a school, or a special club, I’m not sure, but what I do know is that they were not stopping their forward momentum for one little girl. The dragons swirled around me and I was both horrified and excited.
